Here’s my recipe for mini-breakfast “pies,” which make great appetizers.

1 12- ounce carton cottage cheese
1 cup shredded cheddar
1 3-ounce package cream cheese
2 eggs
1 cup Bisquick
¼ cup green onions
2 eggs
¼ cup milk
1 tablespoon sesame seeds toasted
Combine the first four ingredients, set aside
Combine mix and onion in small bowl.
Combine 2 eggs and milk. Pour into mix.
Stir until moistened,
Spoon ½ dough mix into mini-muffin pan.
Spoon 1/2 cheese mixture.
Sprinkle with sesame seeds.
Bake 375 degrees, 20-35 minutes or until inserted knife comes out clean.
